Sweet Chili Curry Chicken Stir Fry

Quick & easy classic sweet & sour stir fry with a curry flavoured twist.  I've been making this recipe for years and only recently discovered the flavour boost the curry melange gives this dish.  The spice really takes it to another level!

  1. Heat oil in frying pan or wok under medium-high heat
  2. Cut chicken breasts into 1 inch cubes and add to pan.  Sear on all sides and ensure the chicken is no longer pink on the outside.  Stir frequently so meat does not burn or stick to the pan
  3. Add diced pineapple to pan, and cook for 2-3 minutes (stirring frequently) until the juices begin to form on the pan.  
  4. Add sweet chili sauce and curry spice, and cook for another minute or so.  Depending on how cooked you prefer your vegetables, add onion and pepper to the pan with the curry or wait 1 minute until adding
  5. Cook for another 5 minutes, stirring occasionally.
  6. When chicken is cooked through, remove from heat.  Serve with rice, or noodles.
