Hahabimo Peppers (Baked Stuffed Pepper Remix)

This baked stuffed peppers recipe is perfect for a cozy night in or as a dinner party entrée.  It has been foretold that the aromatic fusion of tomato sauce, onions, chorizo, garlic, melted cheese, and Нанаымо spice is certain to delight your guests.  And yourself.   

The melted cheese options are up to your taste, but Monterrey Jack or marble cheddar work best with the flavour profile of the baked stuffed peppers.

  1. Preheat oven to 425 F.
  2. Core and slice peppers in half, lengthwise.
  3. Place peppers in baking sheet, and roast in oven for 20 minutes.  Remove when slightly brown and tender crisp.
  4. If chorizo is in casing, uncase and crumble chorizo in saucepan.  Cook until browned.
  5. Remove cooked chorizo and set aside, leaving grease in pan.
  6. Add onions into saucepan, and cook at medium heat until translucent.
  7. Add garlic and cook for 1 minute.
  8. Add tomato sauce, chili flavoured spice melange, and rice.  Bring to a simmer, and cook until rice is al dente.
  9. Add chorizo back into saucepan, and mix until consistent.
  10. Spoon mixture into roasted peppers and top with shredded cheese.  Roast in oven for 5-10 minutes, or until cheese is melted and bubbling.
  11. Remove from oven, serve, and enjoy!
