Curry Fried Rice

Curry chicken fried rice with pineapples, peppers, beans, and onions

This recipe goes great for any leftover rice.  Zap life back into that old rice with SPICEFIEND Curry Spice Melange!  This recipe also makes good use of any vegetables left in the refrigerator as well, so please experiment with anything you might find!  This is a vegetarian recipe, but meat also can be added if desired.

ingredients

  • 2 cups cooked rice
  • 0.5 medium onion, chopped
  • 1 green pepper
  • 1 chili pepper
  • 1 zucchini
  • 0.5 cup chopped carrots
  • 0.5 cup peas
  • 1 tbsp sesame oil
  • 1 tbsp chopped garlic
  • 1 tbsp SPICEFIEND Curry Flavoured Spice Melange
  • 2 tsp chopped ginger
  • lime juice, to taste
  • 1 tsp cilantro, for garnish

instructions

  1. Heat oil in a frying pan or wok over medium-high heat
  2. Add ginger, onions, and garlic to the frying pan, stirring frequently for 1 minute until translucent and soft
  3. Add all other vegetables and cook for approximately 5 minutes, stirring frequently
  4. Once vegetables are cooked to desired level, add Curry Spice Melange, lime juice, and rice, stirring for 1-2 minutes
  5. Serve with cilantro as garnish
